5 INGREDIENT MEALS | VEGETARIAN EASY AND QUICK MID WEEK MEALS | COOK #WITHME | LUKE CATLEUGH

I hope you are all doing well. Welcome back to my channel.
I am so excited to bring you this weeks mid week video as it has been very highly requested. The current situation the world finds itself in, it means that ingredients are difficult to find.
I have put together 5 meals that use 5 ingredients and some basic store cupboard ingredients like oil and seasoning. I have also written out all of the ingredients and methods below if that is easier to follow along.

STORE CUPBOARD INGREDIENTS:
– Olive oil
– Salt
– Pepper
– Stock cubes
– Balsamic vinegar
– Mustard
RECIPES: IN ORDER
1. PESTO COURGETTE PASTA
– x1 pesto jar
– 400g pasta (any shape)
– x1 courgette
– x1 pack cream cheese
– 200g spinach
2. TOAD IN THE HOLE
– 6 sausages (we used Linda McCartney)
– 2 eggs
– 140g plain flour
– 175ml milk
– Potatoes to serve
3. PAPPA AL POMODORO SOUP
– 3 cloves of garlic
– 1 big bunch of fresh basil
– 500 g ripe cherry tomatoes
– 2 x 400 g tins of quality plum tomatoes (or fresh)
– 500 g stale quality bread
4. ROASTED ROOT VEG PIE
– 1x 250g pack puff pastry
– 2 large carrots
– 1 leek
– 2 large parsnips
– cream
– 2tsp wholegrain mustard (can be any mustard)
5. Pesto Mushroom Tarts
– x1 pesto jar
– 200g puff pastry
– 1 red onion
– 80g cheddar cheese
– 200g mushrooms

  4. Asda free from pesto is vegan and sacla do a vegetarian/ vegan one. Animal Rennet is grim but it depends how strict you are.

  7. Can hardly believe it but my partner just came in from the garden with 2 courgettes so guess what we are having for dinner tomorrow night- 2 meals sorted!! Thanks Luke!

  9. I've never seen a pesto sauce that color I'm so used to the green one sounds delish though I'm going to have to see if I can find some salsa like that cuz I lived over in the US
