VEGETARIAN FOOD PREP – QUICK AND EASY (Mini meal prep session!)

Preheat oven to 375 degrees fahrenheit or 180 degrees celcius.
******* GROCERY LIST *******
⦁ 2 very large sweet potatoes (roast for 30 mins)
⦁ 3 zucchinis (to make into zucchini noodles)
⦁ 3 zucchinis, olive oil, salt and chilli (roast for 15 mins)
⦁ 3 bunches of asparagus spears, olive oil, salt and pepper
(roast for 10 mins)
⦁ 200g button mushrooms
⦁ 200g cherry tomatoes
⦁ 200g low fat fetta cheese
⦁ Nutritional Yeast (I buy this from www.iherb.com )

******* TOMATO SAUCE INGREDIENTS *******
⦁ 4 large chopped vine ripened tomatoes
⦁ 1/2 a chopped head of celery
⦁ 200g cherry tomatoes
⦁ 4 pitted medjool dates (depending on how sweet you like
your sauce)
⦁ 1 heaped tablespoon of semi dried tomatoes
⦁ 1 tablespoon of oregano
⦁ You could also add onion powder, garlic powder and a handful of walnuts if you like for extra taste
Blend the tomato sauce ingredients in your blender or food processor before stirring in some fresh chopped up basil leaves. Store your tomato sauce in the fridge in a mason jar for up to 4 days.

Hello @222ouch- for some reason I cant respond to your comment so hopefully you can see it here!  If you dip the zucchini noodles in boiling hot water for a couple of minutes and take them straight out, they should not get too mushy.  My sauce was quite sweet because I have a sweet tooth but if you are feeling cautious just blend one medjool date in your tomato sauce before adding any more medjool dates.  If you prefer a more savoury sauce remember you can add onion powder, garlic powder and walnuts if you like 🙂
