No microwave friendly lunchbox idea that is easy to prepare and that fills u up without making u feel heavy or drowsy efter eating. Lots of healthy fibres and antioxidants that will boost your immune system and keep you feeling great.
Here are the ingredients I used for 3-4 boxes.
200 ml uncooked quinoa (after its cooked it makes around 400-500 ml)
1 vegetable stock cube to cook the quinoa with
1 packet of precooked beets (roughly 6 beets)
4 large handfull of baby spinach
500g broccoli cut into smaller pieces
2 tbs olive oil (for the baked broccolis)
4 handful of roasted walnuts
1 can of white beans
3 tbs hummus
3 tbs tahini
juice from half a lemon (save the other half for cutting to wedges in the boxes)
2-3 tbs of water if you think the dressing is too thick.
