Natural supplements I use:
For the jackfruit:2 20oz cans green jackfruit in water or brine, drained, rinsed, and chopped
* 1 tablespoon light oil (avocado oil)
* 1 red onion , sliced
* 6 cloves garlic , minced
* ½ cup vegetable broth
* 1 tablespoon brown sugar
* ½ lime , juiced
* 2 teaspoons chili powder
* 1 teaspoon cumin
* 1 teaspoon smoked paprika
* ¼ teaspoon salt
* 1/4 hot sauce
For the tacos:
* 6 taco shells
* 1 avocado , sliced
* 1/2 red onion , chopped
* 1/2 cup cilantro
* Vegan sour cream
* lime wedges
To chop the jackfruit:
2. For optimal texture, cut the jackfruit into thin slices from core to the outer edge as seen . This breaks up the tougher core as much as possible and makes for the best shredded texture.. Do NOT discard the seeds, they are edible, and has many benefits
To make the shredded jackfruit:
1. Heat the oil in a large skillet over medium-high heat. When hot, add the onions and garlic and sauté for about 5 minutes until the onions have softened and begin to brown.
2. Add the chopped jackfruit, broth, brown sugar, lime juice and all the spices to the pot and cover. Reduce heat and let it simmer until the jackfruit softens slightly, and about ½ of the liquid is absorbed. About 5 minutes.
3. Mash all the jackfruit to get a shredded texture. cook until it’s dry, just add a splash more vegetable broth if needed.
To assemble the tacos:
1. Warm the taco shells according to the package directions. When warmed, add a scoop of the jackfruit, and top with an avocado , red onion slices, cilantro, and a squeeze of lime juice. vegan sour cream Or you can top with your favorite taco toppings.How to Store
Once a jackfruit’s ripe, it will turn brown and go bad quickly. To keep yours fresh, store it in the refrigerator. When kept cool and dry, a ripe jackfruit can last up to 6 weeks.
How to Prepare It
Jackfruit isn’t easy to peel because of its sticky sap. To keep it from gumming up your knife and hands, rub them with cooking oil before you slice open your fruit. Once you do, it will take time to separate the fleshy bulbs you can eat from tough strips of membrane, which you can’t. You’ll then have to remove the seeds from each bulb.
