Here’s a recipe for Greek lentil salad that’s like nobody’s business!!! As far as vegetarian recipes go, this Greek salad is easy to make, delicious to eat and is sure to win over lentil haters far and wide, including yours truly!!! LOL

INGREDIENTS LIST:
– 2 cups lentils (uncooked)
– 150g feta cheese
– 1 onion
– 1 tomato
– Small bunch of parsley
– 4-6 tbsp. balsamic vinegar
– 1/4 cup Greek extra virgin olive oil
– 1 clove garlic
– Salt & pepper to taste
