✹ Recipes ✹
Omelette →
1 (12 oz) block soft tofu
1/2 cup chickpea flour
1 heaping TBSP tapioca starch or cornstarch
3 TBSP nutritional yeast
1 tsp onion powder
1/2 tsp garlic power
pinch of turmeric (optional)
1/2 tsp kala namak (black salt)
Blend all ingredients until completely smooth and allow batter to sit for at least 10 minutes. Heat some oil or vegan butter in a skillet over medium heat. Add in about 1/3 cup batter and spread evenly in pan. Cover and allow to steam for 3-4 minutes, or until the top of the omelette starts to dry out (it will stop being glossy). Carefully flip omelette. Add sauteed veggies and vegan cheese, then fold over. Cover with a lid and allow to steam for an additional 2-3 minutes until cheese is melted. Enjoy!

Mini Cheesecakes →
For the Crust: In a food processor, pulse 1 cup of your favorite nuts with 1 cup of fresh medjool dates until crumbly and mixture sticks together. Line muffin tins or springform pan with a strip of parchment for easy removal and spray lightly with oil.
For the filling:
1 cup raw cashews, soaked overnight or boiled 10 minutes
1 can coconut cream
juice of 1 lemon
1 tsp vanilla extract
3-4 tablespoons maple syrup or agave
pinch of salt
3 TBSP melted coconut oil
Blend all ingredients together until completely smooth. Pour evenly between your muffin tins or into springform pan over crusts. Place in freezer for at least 3 hours. To serve, let them sit out for about 10 minutes at room temperature to soften slightly (like ice cream).
