The vegan hacks are back! What are some of your favorites?
Vegan sweetened condensed milk:
1 can full fat coconut milk
1/2 cup sugar
Simmer for 30-40 minutes until thickened.
Vegan heavy cream:
1 cup cashews, soaked
1 cup + 2-3 TBS almond or soy milk
Blend until smooth.
Low fat mayo:
12 oz silken tofu
1 tsp red wine vinegar
1 tsp cider vinegar
1-2 TBS lemon juice
1/2 tsp sugar
2 1/2 TBS dijon
2 tsp salt
1/4 tsp white pepper
Blend in a food processor or high speed blender until smooth.
