Beans take longer to cook than lentils. Next time try cooking the beans half done first then add the lentils
Brokkoli stems are super delicious! But you need to cut of the dark green part on the outside so it’s not as hard anymore.

I’ve never understood where folks got the idea that broccoli stems are inedible, or not nutritious. I love them
I’ve said it before, and I’ll say it again: with all the wonderful food choices, why would you want to even eat the same thing g 2 days in a row, much less 4?
The husk of the broccoli stem is super fibrous so i cut/peel that off -but def eat the inside of the broc stem! 🙂

i wish more people understood how to eat naturally as human beings. this meal prep is a far cry from "lazy", or "no time". Simple eating is healthiest, and easiest. 4 mangoes for example, is a natural meal that requires approximately 0 minutes to prepare. An hour to prepare a meal is exemplary of how little we know about what we're supposed to eat and how. But,… props for being vegan, and for showing people something fun to do in the kitchen.

I know plastic meal prep containers are cheap and light, but you should maybe consider glass containers. Even food grade plastics can add unwanted chemicals into your wonderful meals.
